My Kingdom for Pancakes!

I’m not one for swearing or cursing but I’m just going to come right out and say it, work is kicking my ass.
Badly.
And something very strange is happening to me. At the most inopportune moments during the day, my thoughts turn to pancakes.
Tall stacks of fluffy pancakes. Blueberry pancakes. Buttermilk pancakes. Pumpkin pancakes.
Pancakes dripping syrup. Pancakes glistening with melted butter.
Towers of pancakes surrounded by an adoring crowd of chocolate-drizzled strawberries.
All I want are some pancakes.
Sigh.

Ricotta Pancakes
From Bill Granger’s Bill’s: Breakfast, Lunch + Dinner.
Note: Over the past few months, I’ve fallen in love with Bill Granger. I’ve purchased three of his cookbooks including this one and I’m smitten. These pancakes were incredible!
1-1/2 cups ricotta (try to use a dry ricotta, otherwise drain your ricotta in a paper-towel lined colander overnight in the refrigerator)
1 tbsp. sugar
3/4 cup milk
4 eggs, separated
1 cup plus two tablespoons of all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract
1 tbsp. grated orange zest
unsalted butter (for cooking the pancakes)
In a bowl, combine the ricotta, sugar, milk and egg yolks. Mix well and set aside.
Sift together the flour, baking powder and salt. Add to the ricotta mixture. Add the vanilla extract and orange zest and mix well.
In a clean bowl, whip the egg whites until they’re stiff.
Gently fold the egg whites into the ricotta mixture.
Heat a pan or griddle and melt a few tablespoons of butter in the pan. Drop about a quarter cup of batter into the pan for each pancake. Don’t overcrowd the pan.
Cook for two to three minutes on the first side. The pancake will be golden. Flip and cook for an additional two minutes.
Serve warm with butter and syrup. Enjoy!

The pancakes look great and I’ve never tried ricotta pancakes before. They look nice and fluffy and sound like a nice something new for me to try.
As for strawberry adorned pancakes, that sounds like a tempting combination right now. Plus, I’m hosting a strawberry-centric event and I’d love to see one of your beautiful creations there…

These look just the job! They’re very like a ricotta fritter recipe in a Donna Hay magazine which I tried recently - they were very good, too! The orange zest is a lovely touch which really lifts them.

Pancakes are total comfort food! when I was sick recently…one of the first things i was able to eat were pancakes….and I rarely eat them. I tend not to be able to stop! I have never made ricotta pancakes, but i hear they are good.

The ultimate comfort food. My little one often begs me to make breakfast for dinner…. and we sometimes make some really good pancakes with chunks of raspberries, etc. Ricotta sounds like a good idea. Kind of like lasagna pancakes, right?

Oh these are killing me. I was at Trader Joe’s today and they had samples out of their pancakes. If someone had not been at the station, I would have just gone back and back for more samples. Oh how good those look. I so will have to have some this weekend.

When under stress your mind is obviously thinking of things that give you joy to cheer you up. I have experienced something similar only my craving was for rice pudding. I keep meaning to try Bills recipe for the pancakes, so thanks for the reminder. I hope you feel better now. If not, you will just have to make another batch

Yummy pancakes. I recently made red azuki bean pancakes so that I wouldnt feel oh so guilty indulging. At least I could say to myself while I ate… lots of fiber, lots of fiber, lots of fiber. But I can tell you they just arent as good as a plain old pancakea with pecans and maple syrup!

That is SOOO bizarre…. My daughter has been asking for pancakes everyday for a week now. I’ve never quite succeeded in making them, but I’ll give these a try - they’re so darn pretty.

Ah, this happened to me in the fall when I was going carb-crazy for all kinds of things I don’t normally eat much, like tuna casserole, pastas galore, and pancakes! I made Nigella Lawson’s pancake mix from her Nigella Express book and the pancakes are AMAZING!
Hm…Maybe I’ll have cabbage soup for dinner another night…

You know, I’ve had my thoughts turn to a specific food when I was supposed to be doing something else, but I can’t say pancakes has ever been one of those foods. Course now that I’ve read this, I’m going to crave pancakes tomorrow morning. In the middle of swimming. It’ll happen, wait and see!

hey there..these pancakes look like the ultimate! i usually use a recipe by nigella but yours looks so fluffy i think i might have to switch recipes now
by the way, bill granger is amazing yes. do try his Upside Down Banana Cake (i think that was it…or pineapple, can’t remember which but it’s an upside down maple syrup one…it’s heavenly) cheers x

These ricotta pancakes turned out so beautifully fluffy and moist looking. I’ll have to try this recipe out, as I really like Bill Granger’s cooking too. I’ve made his coconut bread which is simply fabulous.

Hi Ivonne - so glad you’ve fallen in love with BIll Granger! I’m a huge fan of his and have got all of his cookbooks. These ricotta pancakes are amazing, as are most of his breakfast recipes. I highly recommend you try his scrambled eggs and also his coconut bread - you won’t be disappointed!

I know that you posted this almost a year ago . . . but I just found it. I wanted to let you know that I made the pancakes the other night and they are undoubtedly the best pancakes EVER. I tried to buy the cookbook but it seems that it’s no longer in print and it’s really expensive used on Amazon. No matter, I’ll keep my eye out for it and in the meantime I’ll keep making these pancakes. Thank you SO much!
