Monday was a great start to the week, but sometimes you need a little something to help you cope with the rest of it.
Here’s a sweet little strawberry tart from Lori Longbotham’s incredible Luscious Berry Desserts. I bought this cookbook last year and indulged in some recipes both here and here.
This one is a gem and comes together quite quickly. All you do is roll out some puff pastry and bake it. Make up a batch of your favourite pastry cream and spread it over the cooled tart base. Then top with some beautiful, fresh strawberries and some melted strawberry jam for a quick glaze.

Wow, I am amazed at how easy that seems and how impressive the result is. I am closing my eyes and picturing this with all kinds of different fruits and berries! I am also picturing the reaction that I would get from my boys if served a treat like this!

Gorgeous and yummy, too, Ivonne. I still haven’t cranked up my oven since vacation…As far as coping goes, I retired nearly two years ago, and well, things are much easier

This truly is a be-utiful looking tart! I would love to try it but I’m not that famliar with using puff pastry. How much would one use and I am not also certain of the kind of pastry cream I would use. I would love to try it.yum!
