Halibut and fava beans.
Two foods I don’t eat nearly enough of.
While fava beans, obviously, are not in season for long, whenever I do eat halibut I always ask myself: why don’t I eat this lovely fish more often?
The opportunity arose to enjoy both of these lovely foods when I saw a recipe in the April 2009 issue of Bon Appétit for Halibut on Mashed Fava Beans with Mint.
While I miscalculated slightly when buying the fava (I didn’t buy quite as much as I needed), this was a tremendously delicious dish. The halibut was light and smooth and the spicy fava bean mash was the perfect accompaniment.
Today is Victoria Day in Canada so it’s a national holiday. I’m off to enjoy the enjoy the day but before I go, here are some more entries from other foodbloggesr who have tackled that magazine pile!

No one ever does anything with Fava Beans, and I love them. They are hard to find sometimes around these parts. Some years the Farmer’s Markets have them, sometimes not.

I cannot get fava beans here. Period. Only in a can. I am going to have to try to grown my own! The halibut loks fabulous and is one of my favorite fish. I made some last week. Some day I shall have to remember magazine Mondays again. It gets away from me. But I must say, when you cook from your magazines you have exceedingly good taste. A perfect meal. Enjoy the holiday!

Hmmm…this is not your average little girl birthday cake, is it? Goodness. I’m a complete sucker for dots, though, and whenever I get a pastry bag in my hand with frosting in it, I’m making dots. Simply beautiful, Ivonne, parents’ teachings about modesty or not.

Ivonne, I must tell you that I’ve been obsessed with this recipe since you posted it. I finally made it last week (halibut was on sale!) but the weather was just too glorious to consider cooking fish indoors. I added a little olive oil to the lemon peel/mint/salt/red peppers, slathered the fish with it and threw it on the grill. It was extraordinary!
Likewise, I couldn’t bear to cook the fava beans to the point of mashing so, after peeling, I tossed then into the skillet olive oil, red pepper & salt. Yum!
