Magazine Mondays: Coconut!

For Valentine’s Day, I made a really nice lunch for Mamma Cream Puff and Brother Cream Puff and instead of ending with a chocolate dessert, I ended with a coconut one.

I’d had my eye on this pretty little thing for awhile and decided to finally try it: Coconut Rice Puddings with Crispy Coconut.

Needless to say it was so yummy! The rice was creamy with just the right touch of coconut flavour. The best part of the recipe, though, was the crispy coconut topping. Luckily I made extra, which I ended up eating out-of-hand because it was so good.

I used to turn my nose up at rice pudding but somewhere along the way as I have made it in class during our comfort food series, it has become a new favorite. This coconut twist will definitely get a bookmark for the next session.

Oh My! These dessert looks amazing. You know, in Spain is so typical a dessert called “arroz con leche” (rice with milk) It’s scented with cinnamon and runnier than rice pudding .Yours is a very original version, I have to try it.

Fabulous dessert and strangely enough my husband has been asking for rice pudding! I think I just found a recipe! It looks perfectly creamy, rich and luscious and personally I adore the coconut!

today i went to this great thai place in sydney where i am on holidays right now. for dessert we had this yummy coconut sticky rice with mango and it was good! very light and tropical. ;) i will blog about it soon but in the mean time i suggest rice pudding with white chocolate stirred into the milk - absolutely devine, give it a try and let me know! ;)

Oh. My. Goodness!!! I am seriously salivating over here. Do you think it’d suffer terribly if I cut the sugar by half? Or used all light milk instead of light+regular mixed?
