For Valentine’s Day, I made a really nice lunch for Mamma Cream Puff and Brother Cream Puff and instead of ending with a chocolate dessert, I ended with a coconut one.
I’d had my eye on this pretty little thing for awhile and decided to finally try it: Coconut Rice Puddings with Crispy Coconut.
Needless to say it was so yummy! The rice was creamy with just the right touch of coconut flavour. The best part of the recipe, though, was the crispy coconut topping. Luckily I made extra, which I ended up eating out-of-hand because it was so good.
This is my Magazine Mondays entry for this week. For those of you that are new to MM, it’s a very informal event that I like to host every Monday where I invite people to send along links from magazine recipes that they’ve tried. It’s a good way to tackle that food magazine pile that we all have lurking somewhere in our house!
Here’s who joined me for this week’s edition of MM:
Dawn from Doable and Delicious made Shrimp with Israeli Couscous from Gourmet. She also made Asparagus Cheese Tartines from the September 2009 issue of Food & Wine.
Nicole of Sweet Tooth made Chocolate Mudslides from a 2005 holiday issue of Martha Stewart Living.
Saveur of The Taste Space made Spiced Yogurt Muffins from the November 2008 issue of Food & Wine.
Remember, just send me a link to any magazine recipe you post and I’ll link to it in my next MM post! Have a great week, everyone!
Ciao!

02/22/10 at 5:01 am

LOOOVE coconut and rice pudding!
02/22/10 at 5:28 am
I used to turn my nose up at rice pudding but somewhere along the way as I have made it in class during our comfort food series, it has become a new favorite. This coconut twist will definitely get a bookmark for the next session.

Ooooh yummy. I imagine this would be extra fantastic with a drizzle of palm sugar (from Asian grocers)!
02/22/10 at 6:36 am
Sweetly spiced delicate rice pudding. What a perfect change from chocolate.

Oh My! These dessert looks amazing. You know, in Spain is so typical a dessert called “arroz con leche” (rice with milk) It’s scented with cinnamon and runnier than rice pudding .Yours is a very original version, I have to try it.
Cheers from Spain!

Gotta try this. My rice pudding rarely works, maybe this one will.
03/6/10 at 6:03 am
today i went to this great thai place in sydney where i am on holidays right now. for dessert we had this yummy coconut sticky rice with mango and it was good! very light and tropical.
i will blog about it soon but in the mean time i suggest rice pudding with white chocolate stirred into the milk - absolutely devine, give it a try and let me know!
03/7/10 at 2:25 pm
Oh. My. Goodness!!! I am seriously salivating over here. Do you think it’d suffer terribly if I cut the sugar by half? Or used all light milk instead of light+regular mixed?
03/9/10 at 4:55 pm
I’m not sure the topping would ever make it to the pudding. I could see myself telling the family, “What topping” as I licked my lips.
03/11/10 at 4:12 am
I got hungry by just reading the recipes and looking at the pictures.
03/11/10 at 6:00 am
YUMMY is the word to best describe it! I’ll make sure to ask the chef of our italian restaurant to add this exactly dessert to our dessert menu. Thank you!
03/11/10 at 6:38 am
Hi, I’ve followed your blog for awhile now but this is my first time commenting. This looks delicious! I love anything coconut so I will definitely be trying this very soon.
